“Zesty Chicken Breast topped with Cherry Sauce and Butternut Mash”
* Chicken Breast
* Full Cream
* Unsalted Butter
* Cherry Tomato
* Salt and Pepper
* Lemon Juice
* Lemon Zest
* White Wine (optional)
1. Cook the butternut in pot with 1tsp of salt for 15mins until its soft to mash. Mash it and add butter, 50ml of cream, finely chopped parsley, salt and pepper. Put it aside for later.
2. Marinate the chicken breast with dill, 2 tbsp of lemon, salt and pepper and lemona zest. Let it marinate for 1-2 hours.
3. Grill the chicken in a grill pan 3 mins each until its cooked (so since I didnt have gas, on the same grill pan I oven baked them for 30mins) then cover with a foil to keep them moist.
4. Add butter in skillet then fry onions until they turn brown, add cherry tomatoes, 2tbsp of wine and garlic. Fry everything together and flame up the alcohol (be careful though) then add 200ml of cream and let it simmer for 5mins and season with salt and pepper.
5. Serve and Enjoy
